Latin-Style Pork

I was initially skeptical of this recipe because of the cinnamon, but it turned out nicely. Usually Roland eats what I serve without much comment, but he gave a thumbs up for this one as he went back for seconds :)

3 lb boneless, pork roast, trimmed and cut in half lengthwise
2 large bell peppers, seeded and sliced
1 medium onion, sliced thinly
14.5 oz. can diced tomatoes
1 Tbs cumin
1/2 tsp cinnamon
3 garlic cloves, sliced
1/2 tsp salt
4 cups cooked rice

1. Place pork in slow cooker bowl with peppers, onion, tomatoes, cumin, cinnamon and garlic cloves. Stir to combine. Cover and cook on highfor 3 hours or low on 6 hours.

2. Remove pork from slow cooker. When cool enough, shred pork. Combine pork with tomato mixture in slow cooker; stir in salt. Serve with rice.
